BYOP night build your own pizza

BYOP — build your own pizza. I put beef fat in the dough because fat is flavor, warm up a pot of my mom's red sauce, set out the mozzarella and a toppings bar, and then genuinely get out of the way. Plus, a vegetarian pasta salad to round out the meal with some hearty veggies; the pasta salad serves 8, but makes great leftovers!

Grocery list

Dough (one batch — two 10-inch pizzas)

  • 260 g bread flour, plus a little extra for the bench
  • 165 g chicken stock — homemade (see the Chicken Stock recipe) or store-bought
  • 8 g beef fat, melted (render your own, or ask Premier Meat Market)
  • 10 g fine sea salt — only 5 g if your stock is already salted
  • 3 g sugar · 1 g instant yeast · 2 g baking powder · 2 g ground oregano
  • A kitchen scale, which is the whole point — baking is a science

Cheese

  • 1 lb low-moisture mozzarella, shredded (~1/3 lb a pizza, plus room for the enthusiasts)
  • Wedge of parmesan, for finishing

Toppings bar

  • Whatever's good that week — this is the whole point
  • Tomball Farmer's Market is where I'd start

Produce (pasta salad)

  • 16 oz portabella mushrooms, sliced
  • 4 limes (6 tbsp juice, for the vinaigrette)
  • 1 bell pepper
  • 1 red onion
  • 1 avocado
  • 1 carrot · 1 onion · 2 celery stalks — these build the stock, then come back out
  • 1 clove garlic

Pantry (pasta salad)

  • 16 oz medium shells
  • 1 can Rotel
  • 1 can sliced black olives
  • 1 can corn
  • 1 can black beans
  • Small can chipotles in adobo (you need 1 pepper + 1 tbsp of the sauce)
  • 1/2 cup avocado oil
  • 2 tbsp red wine vinegar
  • 1 tbsp honey · 1 tsp ground cumin

Dairy (pasta salad)

  • 8 oz cotija cheese, crumbled
  • 1 tbsp butter

Meat (red sauce)

  • 2 links Italian sausage
  • 2 links spicy Italian sausage

Produce (red sauce)

  • 1 sweet onion
  • 1 carrot
  • 1 head garlic (~6 cloves)
  • 1 packed cup basil leaves
  • 8 sprigs thyme
  • 1 sprig rosemary

Pantry (red sauce)

  • 2 (6 oz) cans tomato paste
  • 1 bottle Italian red wine
  • 2 (28 oz) cans crushed tomatoes
  • 2 (28 oz) cans San Marzano tomatoes
  • 4 cups chicken stock — homemade (see the Chicken Stock recipe) or store-bought
  • 4 bay leaves
  • Salt, olive oil (on hand)
  • Skip this whole section if you've got a portion of red sauce in the freezer, which is the entire reason I freeze it
